Kulcha is made from Maida flour, water, a pinch of salt and a leavening agent (yeast or old kulcha dough) are mixed together by hand to make a very tight dough.

For Dough
  • 2 cup Maida(plain flour)
  • 1 tsp Sugar
  • 1 tsp Baking powder
  • to taste Salt
  • 2 tsp Oil
  • to knead dough Water
For Potato Stuffing
  • 2 large Boiled, Mashed potato
  • 1 Green chili  (finely chopped)
  • 1/2 tsp  Red chili powder
  • 1/2 tsp Garam masala
  • 1 tsp Ginger-garlic paste
  • 1/4 tsp Chat masala
  • 1/4 tsp Carom (ajwain)
  • 2 tbsp Coriander leaves (finely chopped)
  • to taste Salt

  • 2 tsp Black sesame seeds
  • 2 tbsp Coriander leaves (finely chopped)
  • 2 tbsp Butter

Instructions
For Dough
  1. Place maida, sugar, baking powder, salt and oil in a mixing bowl and knead a soft dough with a water.
  2. Cover with a cotton cloth and rest for 1 hours in warm place.
For Stuffing
  1. Place potato, green chili, red chili powder, garam masala, ginger-garlic paste, chat masala, ajwain, coriander leaves and salt in a mixing bowl.
  2. Mix everything really well and keep aside.
Assemble
  1. After 1 hours, pinch a ball sized dough and roll into 5 inch circular disk.
  2. Place 2 tsp or as required aloo stuffing in a center. Take the edge and start pleating bringing to centre.
  3. After that, sprinkle some sesame seeds and coriander leaves.
  4. Gently roll into oval shape using rolling pin.
  5. Brush with water over kulcha. Slowly flip over and put it on hot tawa and press gently.
  6. After a minute, flip the tawa upside down and cook kulcha directly on flame till they turns golden brown.
  7. Spread some more butter.
  8. Serve with sabzi.
