Gujarati Handvo

Handvo is a spicy vegetable cake from the western state of Gujarat, India.
The main ingredients are 5 different types of Daal or Lentils and different veggies like Cabbage and Carrot. But Bottle gourd or Lauki is the main ingredient.

Today, we are going to make Handvo without a cooker. As you’ve heard right we will make Handvo using a Nonstick Pan. Handvo can be served with Chhunda, Chutney, Curd, and Pickles. But today we would enjoy the Handvo with a Chai in High Tea.

For Batter
  • 1 cup Rice
  • 1/2 cup Chana dal
  • 1/2 tbsp Methi seeds
  • 1/4 cup Tuvar dal
  • 2 tbsp Urad dal
  • 1 cup Warm water
  • 1/2 cup curd
  • to taste Salt
  • 2 Chopped Green chili
  • 1 tbsp Ginger paste
  • 1/2 cup Grated carrot
  • 1/2 cup Grated lauki
  • 1 small packet or 1 tsp Eno
  • 1/4 cup Coriander leaves (chopped)
  • 1/2 tsp Turmeric powder
  • 1 tbsp Oil
For Tadka
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds(rai)
  • 1 Bay leaf
  • 1 tsp Sesame seeds(til)
  • few Curry leaves
  • pinch Hing
  • 2 Dry red chili

For Tadka
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds(rai)
  • 1 Bay leaf
  • 1 tsp Sesame seeds(til)
  • few Curry leaves
  • pinch Hing
  • 2 Dry red chili
Instructions
  1. Blend Rice, Chana dal, Tuvar dal, Urad dal, and Methi seeds in a mixer jar and make a fine powder.
  2. Transfer the powder into a bowl and add warm water, curd and salt.
  3. Mix it well, cover with a lid and ferment for 7 to 8 hours or overnight.
  4. After 8 hours, add green chili, ginger paste, grated carrot, grated lauki, coriander leaves, turmeric powder, oil and eno in the bowl.
  5. Mix everything really well and make thick batter.
  6. Now, heat oil in a pan and add mustard seeds.
  7. When seeds crackle then add cumin seeds, hing, dry red chili, sesame seeds, curry leaves and bay leaf in the pan and saute for few seconds.
  8. Now, place 2 to 3 tablespoon of the handva batter. Slide mix it and cover with a lid and cook for 7 minutes on medium flame.
  9. After 7 minutes, flip the handva and again cook for 4 to 5 minutes.
  10. Transfer the handvo into a plate.
  11. Meanwhile cook handavo from rest of the batter.
  12. Sreve handvo with a tea.
