For garam masala
  • 1 tsp Cumin seeds
  • 1/2 inch Cinnamon stick
  • 1 Bay leaf
  • 3-4 Cloves
  • 4 Green cardamom
  • 2 tsp Coriander seeds
  • 1 tsp Fennel seeds
For sabzi
  • 4 Roasted papad
  • 3 tsp Oil
  • 1/2 tsp Cumin seeds
  • 5-6 Curry leaves
  • pinch Hing
  • 2 medium Onion (finely chopped)
  • 3 medium Tomato (finely chopped)
  • 2 tsp Ginger-garlic paste
  • 2 Green chili  (finely chopped)
  • 1/2 tsp Turmeric powder
  • 1/2 tsp  Red chili powder
  • 1 tsp Coriander powder
  • to taste Salt
  • 1 tsp Sugar
  • 1/4 cup Water
  • 1 tsp Lemon juice
  • 1/2 tsp Garam masala
  • 1/2 tsp Kasuri Methi crushed

For sabzi
  • 4 Roasted papad
  • 3 tsp Oil
  • 1/2 tsp Cumin seeds
  • 5-6 Curry leaves
  • pinch Hing
  • 2 medium Onion (finely chopped)
  • 3 medium Tomato (finely chopped)
  • 2 tsp Ginger-garlic paste
  • 2 Green chili  (finely chopped)
  • 1/2 tsp Turmeric powder
  • 1/2 tsp  Red chili powder
  • 1 tsp Coriander powder
  • to taste Salt
  • 1 tsp Sugar
  • 1/4 cup Water
  • 1 tsp Lemon juice
  • 1/2 tsp Garam masala
  • 1/2 tsp Kasuri Methi crushed
Instructions
  1. For garam masala, roast masala ingredients for 2 minutes on low flame or till they become aromatic.
  2. Turn off the flame and let cool them completely. then grind it and make a fine powder. Keep aside.
  3. Heat 1 tsp oil in a pan and add onions, tomatoes and green chili. saute for 3 to 4 minutes on medium flame.
  4. After 4 minutes, cool it completely. then blend it and make a smooth puree.
  5. Heat 3 tsp oil in a pan and add cumin seeds, curry leaves, hing and ginger-garlic paste. saute for few seconds on medium flame.
  6. After that,add puree in a pan and saute for 1 minutes. then pour 1/4 cup of water in a pan. Mix it well.
  7. Furthermore add turmeric powder, red chili powder, coriander powder, salt, sugar and sugar juice in a pan.
  8. Mix everything really well and cook them for 4 to 5 minutes or till oil released on top of mixture.
  9. Add garam masala and kasuri methi in a pan. Mix it well.
  10. Finally add broken roasted papad in a pan. Mix it gently and turn off the flame.
  11. Serve hot with paratha.
