Khandvi, also known as Patuli, Dahivadi or Suralichi Vadi, is a savory snack in Maharashtrian cuisine as well as in Gujarati cuisine of India.It consists of yellowish, tightly rolled bite-sized pieces and is primarily made of gram flour and yogurt.

For Khandavi
  • 1 cup Besan (gram flour)
  • 1/2 tsp Ginger paste
  • 1/2 tsp Green chilli paste
  • 1/4 tsp Turmeric powder
  • to taste Salt
  • 2 cup Butter milk
For Tadka
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 7-8 Curry leaves
  • 1 tsp Sesame seeds(til)
  • 2 tsp Oil

For Khandavi
  • 1 cup Besan (gram flour)

For Tadka
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 7-8 Curry leaves
  • 1 tsp Sesame seeds(til)
  • 2 tsp Oil
Instructions
For Khandavi
  1. Place besan, ginger paste, chili paste, turmeric powder and salt in a big mixing bowl. Mix it well.
  2. Pour 2 cup of butter milk in a mixture and make liquid type batter.
  3. Make sure there are no lumps in a batter.
  4. Pour this batter in a medium steel lids or thalis.
  5. Take pressure cooker and pour 3 cup of water and boil it well. Put ring in a water and then place batter thalis into cooker.
  6. Cover with a lid and put on medium flame for 3 whistles.
  7. After 3 whistles, take out thali from the cooker. Your batter is thick.
  8. Take 2 tbsp batter and spread on thalis immediately. mean while spread rest of the batter as well.
  9. Rest for 10 minutes.then cut into 2 inches pieces.
  10. Now roll tightly one by one. Your khandavi is ready.
For Tadka
  1. Heat oil in a tadka pan and add mustard seeds.When seeds crackle then add cumin seeds, curry leaves and til. Saute for few seconds.
  2. Now pour this tadka onto khandavi.
  3. Garnish with coriander leaves.
  4. Ready to serve.
