For Kofta
  • 2 cup Grated lauki
  • 1 cup Besan (gram flour)
  • to taste Salt
  • 1 tsp  Red chili powder
  • 1 tsp Coriander powder
  • 1 tsp Sesame seeds(til)
  • 1 tsp Fennel seeds
  • 1/4 tsp Turmeric powder
For gravy
  • 2 medium Onion (chopped)
  • 2 medium Tomato (chopped)
  • 2 Green chili  (finely chopped)
  • 1/4 cup Cashew nuts
  • 1/2 tsp  Red chili powder
  • 1/4 tsp Turmeric powder
Other
  • 1 tsp Cumin seeds
  • 1 Bay leaf
  • to taste Salt
  • 1/2 cup curd
  • 1/4 cup Water
  • few Kasuri Methi
  • 2 tsp Coriander leaves (finely chopped)
  • Oil for deep fry
  • for dust Corn flour
  • 1 tsp Sugar

  • 2 Green chili  (finely chopped)
  • 1/4 cup Cashew nuts
  • 1/2 tsp  Red chili powder
  • 1/4 tsp Turmeric powder

  • 1 tsp Cumin seeds
  • 1 Bay leaf
  • to taste Salt
  • 1/2 cup curd
  • 1/4 cup Water
  • few Kasuri Methi
  • 2 tsp Coriander leaves (finely chopped)
  • Oil for deep fry
  • for dust Corn flour
  • 1 tsp Sugar
Instructions
For kofta
  1. Take grated lauki, besan, salt, red chili powder, coriander powder, til, fennel seeds and turmeric powder in a mixing bowl.
  2. Mix it and knead dough. make small balls from the dough and spread corn flour. keep aside.
  3. Heat oil in a deep fry pan and fry kofta till it turns golden brown.
  4. Transfer kofta into plate and keep aside.
For gravy
  1. Heat 1 tsp oil in a pan and add onions, tomato, green chili, cashew, coriander powder and red chili powder. saute for 1 minutes on low flame.
  2. Transfer this mixture into mixer jar and blend it till it turns smooth paste.
Assemble
  1. Heat 2 tsp oil in a pan and add cumin seeds and bay leaf. saute for few seconds.
  2. After that, add onion + tomato paste in a pan. Mix it well and saute for 1 to 2 minutes or till it become thick paste.
  3. Add 1/4 cup of water and curd in a puree. Also add pinch of salt, sugar, coriander powder.
  4. Mix everything really well. Saute till oil released on top of gravy on medium flame.
  5. After that, add kofta in a gravy. also add crushed kasuri methi and coriander leaves.
  6. Mix it and transfer into bowl and garnish with coriander leaves.
  7. Serve hot with paratha.
