Nylon khaman

Khaman or Khaman Dhokla is a recipe from Gujarat, India. Gram flour or Besan is the main ingredient of Nylon Khaman recipe. The reason behind the name Nylon Khaman is that Khaman is soft as Nylon fabric.

In Gujarat, we have it at breakfast or as a side dish at lunch. I still remember having khaman dhokla in the streets of Ahmedabad. Here I have posted the classic version of Khaman but there are a couple of variations available as well. Additionally, this is a popular Jain and Satvik recipe as well.

For batter
  • 1.5 cup Besan (gram flour)
  • to taste Salt
  • 1 tsp Sugar
  • 1.5 tsp Citric acid(nimbu phool)
  • 1 tsp Ginger paste
  • for batter Water
  • 1 tsp or small packet Eno(soda)
For tadka
  • 1/4 cup Oil
  • 1/2 tsp Mustard seeds(rai)
  • 1/2 tsp Cumin seeds(jeera)
  • 1 tsp Sesame seeds(til) powder
  • 1 Chopped Green chili
  • 1/4 cup Water
  • 1 tbsp Sugar
  • Coriander leaves (chopped)
  • Grated coconut

  • 1.5 cup Besan (gram flour)
  • to taste Salt
  • 1 tsp Sugar
  • 1.5 tsp Citric acid(nimbu phool)
  • 1 tsp Ginger paste
  • for batter Water

For tadka
  • 1/4 cup Oil
  • 1/2 tsp Mustard seeds(rai)
  • 1/2 tsp Cumin seeds(jeera)
  • 1 tsp Sesame seeds(til) powder
  • 1 Chopped Green chili
  • 1/4 cup Water
  • 1 tbsp Sugar
  • Coriander leaves (chopped)
  • Grated coconut
Instructions
  1. Filter 1.5 cup of gram flour(Besan) in a big mixing bowl.
  2. Add Salt, 1 tsp sugar, 1.5 tsp nimbu phool and 1 tsp ginger paste in the bowl. Mix and make a thick batter with water.
  3. Also, add 1 tsp or 1 small packet of Eno(soda) in the batter. Mix it and stir continuously so, the batter becomes fluffy and smooth.
  4. Grease oil in a steamer plate and pour the batter in a plate. Steam khaman on a medium flame for 20 minutes.
  5. At that time heat oil in a small pan and add mustard seeds(rai) when seeds crackle then add sesame seeds(til), cumin seeds(jeera) and green chili. Saute for a few seconds.
  6. Now turn off the flame and add sugar and water. Mix it well.
  7. After 20 minutes, take out the plate and cut khaman into pieces.
  8. Pour tadka evenly on the khaman and garnish with coriander leaves and grated coconut.
  9. Khaman dhokla is ready to serve.
