Palak Paneer Biryani with Onion Raita

For Raita
  • 1 cup curd
  • 1 medium Fine chopped onion
  • 1/4 cup Fine chopped tomato
  • to taste Salt
  • 1/4 cup Chopped coriander leaves
  • 1/2 piece Chopped Green chili
For Biryani Rice
  • 1 Bunch spinach(palak)
  • 1 cup Basmati rice
  • 1 Bay leaf
  • 6-8 Black pepper
  • 4-5 Cloves
  • 3 Green cardamom
  • 1 inch Cinamon stick
  • 1 Star anise
  • 3 cup Water
For Biryani Masala
  • 2 tbsp Butter
  • 1 cup Paneer cubes
  • 1 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1 cup Onion (chopped)
  • 2 medium pieces Tomato (chopped)
  • 1/2 tsp Ginger-garlic paste
  • 1/4 cup Water
  • 1 tsp Coriander powder
  • to taste Salt
  • 1 tsp Biryani masala
  • 1 tsp  Red chili powder
  • 2 tsp Sugar
  • 1 tbsp Lemon juice
  • 1 tsp Kasuri Methi
  • 2 tsp Fresh cream
  • 1 tsp Butter
For Garnish
  • 1 cup Sliced onion
  • 2 pinches Salt
  • 1 tbsp Oil
  • 6-7 pieces Cashew nuts

  • 1 tsp Kasuri Methi
  • 2 tsp Fresh cream
  • 1 tsp Butter
For Garnish
  • 1 cup Sliced onion
  • 2 pinches Salt
  • 1 tbsp Oil
  • 6-7 pieces Cashew nuts
Instructions
For Raita
  1. Mix onion, tomato, and green chili in a mixing bowl.
  2. Also, add whisk curd and coriander leaves in the bowl. Mix everything well.
  3. Cool the raita in a refrigerator for 30 minutes.
For Rice
  1. Soak rice in a 3 cup of water for 15-20 minutes. After that, drain the rice.
  2. Boil water in a pan and add bay leaf, black pepper, cloves, green cardamom, cinnamon stick and star anise.
  3. Furthermore, add rice in the boiling water and simmer till rice are cooked completely.
  4. When the rice cooked completely then drain it and keep aside.
For Biryani Masala
  1. Wash palak 2 times in water and drain it.
  2. Heat 3 cups of water in a pan and add palak and boil it for 10 minutes.
  3. Drain the boiled palak and blend it and make a fine puree. Keep aside.
  4. Heat 2 tbsp butter in a pan and add coriander seeds and cumin seeds. Saute for a few seconds.
  5. Add chopped onion and ginger-garlic paste in a pan. Saute till onion becomes light pink.
  6. After that, add tomato and saute for 1 minute.
  7. Now, add 1/4 cup of water in a pan. Cover and cook for 5 minutes or till the mixture become mashy.
  8. After that, add coriander powder, salt, biryani masala, red chili powder, sugar, lemon juice, and kasuri methi in the pan. Mix everything well.
  9. Add palak puree and paneer cubes in the pan. also, add 1/4 cup of water.
  10. Mix it well and cook for 5 minutes or till oil released on top of the gravy.
For Garnish
  1. Heat oil in a pan and add sliced onion and salt. Saute till it turns golden brown.
  2. Now, add cashew and saute for 1 minute. Transfer into a bowl and keep aside.
For assemble
  1. Take a deep pan and spread palak-paneer gravy as shown in the video.
  2. Now, spread cooked rice. Repeat these steps for 2 times.
  3. Put sauteed onion on top of the layer. also, sprinkle some butter and fresh cream on top of the layer.
  4. Cover with a lid and put the pan on high flame for 60 seconds and then do low flame and cook for 1 minute.
  5. Transfer the palak-paneer biryani to a bowl. Garnish with fried onion and paneer cubes.
  6. Serve palak-paneer biryani with onion raita.
