Shahi Paneer | शाही पनीर | શાહી પનીર

Shahi Paneer is a north Indian vegan main course curry. The meaning of Shahi is Royal. The fact that one has to filter the already cooked gravy and then cook it again. This makes sure that neither Garam Masala including Clove or Bay leaf is left in the final preparation. Post this, fresh cream is added is the plating. The rich creamy flavor is the reason this curry is known as Shahi or Royal Paneer.

An important fact here is that make sure to have a 2:1 ratio of Tomatoes and Onions. This means if you take 4 Tomatoes then make sure to add 2 Onions.

For Shahi Gravy
  • 4 Medium Tomato (chopped)
  • 2 Medium Dice onion
  • 3/4 cup Cashew nuts
  • 8-10 cloves garlic
  • 1 tbsp Ginger chopped
  • 2 Green chili  (fine chopped)
  • 1 Bay leaf
  • 2-3 Green cardamom
  • 1 Black cardamom
  • 1 inch Cinamon stick
  • 3 Cloves
  • 1 tsp kashmiri chilli powder
  • to taste Salt
  • 1 tbsp Butter
  • 2 cup Water
Other ingredients
  • 2 tbsp Butter
  • 1 tsp Ginger-garlic paste
  • 1 Green  chili
  • 8-10 Paneer cubes
  • 2 pinches Salt
  • 1 tsp Crushed kasuri methi
  • 1 tbsp Fresh cream

  • 1 tbsp Fresh cream
Instructions
  1. Heat a pan and add the Shahi Gravy ingredients. Mix it well and cover and cook for 20 minutes on medium flame.
  2. After 20 minutes, cool it completely and make a smooth puree.
  3. Now, take a bowl and filter the puree as shown in the video. so, you can get smooth and creamy gravy.
  4. Heat a pan and add butter. When butter melted then add green chili and ginger-garlic paste. Mix it well.
  5. Furthermore, add paneer cubes and salt into the pan and stir fry it for 30 seconds.
  6. After 30 seconds, Pour the shahi puree into the pan and mix it well.
  7. Also, add kasuri methi, cardamom powder, and fresh cream into the pan and mix it well.
  8. Cook it for 10 minutes and then transfer into a plate.
  9. Shahi paneer garnish with kasuri methi and cream.
  10. Serve shahi paneer with paratha.
