Surti Locho | સુરતી લોચો | सुरती लोचो

Surti locho is steamed Gujarati Farsan (Snack /Side Dish) originated in Surat. It is made from Gram Flour. The dish derives its name from its loose Consistency and irregular shape like dumplings. It is somewhat related to Khaman. Unlike Khaman it is not served in regular shaped cut pieces. It is often seasoned with oil, butter, Sev, spices, coriander, onion, etc.

For Batter
  • 1/2 cup Chana dal
  • 2 tbsp Urad dal
  • 2 Green chilli (chopped)
  • 1 inch Ginger chopped
  • 1 tbsp or 1/3 cup Besan (gram flour)
  • 2 tbsp curd
  • 1/4 cup Water
  • 1/2 tsp or 1/2 small packet Eno(soda)
  • 1 tsp Salt
  • 1/2 tsp Turmeric powder
  • 1/4 tsp Hing
  • 1/2 tbsp Oil
For Surti Locho Masala
  • 1/2 tsp Black pepper powder
  • 1 tsp  Red chili powder
  • 1 tsp Black salt(sanchar)
  • 1 tsp Cumin powder
For Serve
  • Fine chopped onion
  • Fine sev
  • Melted butter

Instructions
  1. Soak chana dal and urad dal separately in a bowl for 4 to 5 hours.
  2. After 5 hours, place drained chana dal and urad dal in a mixer jar. Also, add green chili, ginger, gram flour, curd and water in the jar and make a smooth puree.
  3. Transfer puree into a bowl, cover with a lid and ferment to overnight.
For surti locho masala
  1. Mix all masala into a small bowl and keep aside.
  2. After overnight, whisk the batter and add salt, turmeric powder, hing, and oil.
  3. Mix it well.
  4. Take 1 cup batter in a separate bowl and add 1 cup water and 1/2 tsp eno(soda) in the bowl. Mix it well.
  5. Now, grease oil in a steamer plate and pour the batter into the plate. Steam it for 15 minutes.
  6. After 15 minutes, take out the plate and transfer locho to a plate as shown in the video.
  7. Also, add melted butter, sev, finely chopped onion, surti locho masala, and coriander leaves into the plate.
  8. Serve hot surti locho with Green chutney.
