Thandai or Shardai is an Indian traditional drink consumed on the occasion of special festivals like Holi. Milk, Exotic spices and nuts are the main ingredients of Thandai.

There are couple of varients available out there for Thandai including Mango, Rose and Kesar Badaam etc. This one is a classic recipe with some twists.

  • 2 tbsp Poppy seeds(khas khas)
  • 1 tbsp Cashew nuts 10-12 cashew
  • 1 tbsp Almonds 12-15
  • 1 tbsp Pista 12-15
  • 1 tbsp Watermelon seeds
  • 2 tsp Fennel seeds
  • 7 tbsp Sugar
  • 1 tsp Cardamon seeds
  • 1 tsp Black pepper
  • 1/2 inch Cinamon stick
  • 2 Cloves
  • 2 glass Milk or 1/2 liter
  • 10-12 Saffron strands
  • 1 tbsp Rose water
  • Few Rose leaves

  • 2 tbsp Poppy seeds(khas khas)
  • 1 tbsp Cashew nuts 10-12 cashew
  • 1 tbsp Almonds 12-15
  • 1 tbsp Pista 12-15
  • 1 tbsp Watermelon seeds
  • 2 tsp Fennel seeds
  • 7 tbsp Sugar
  • 1 tsp Cardamon seeds
  • 1 tsp Black pepper
  • 1/2 inch Cinamon stick
  • 2 Cloves
  • 2 glass Milk or 1/2 liter
  • 10-12 Saffron strands
  • 1 tbsp Rose water
  • Few Rose leaves
Instructions
  1. Soak Poppy seeds, Cashew nuts, Almonds, Pistachio, Watermelon seeds, and Fennel seeds separately in a small bowl for 4 hours.
  2. After 4 hours, drain it and grind into a mixer jar. Now make a smooth paste.
  3. Transfer the paste to a bowl.
  4. Now, grind Sugar, Cardamom, Black Pepper, Cinnamon stick and Cloves into a mixer jar and make a smooth powder.
  5. Transfer the powder into the bowl containing the paste. Mix it well.
  6. Also, add Rose water into the bowl and mix it well.
  7. Now, add Saffron strands into the milk and heat till it boils.
  8. Take 2 glasses and pour the milk.
  9. Now add 2 tbsp of Thandai mixture. Mix it well and cool it for 2 to 3 hours.
  10. After 3 hours, take the glass out of the refrigerator.
Serving
  1. Garnish with Dry Fruit mixture and dried Rose Petals,
  2. Serve it chilled. Happy Holi every one...
