Vadodara special sev usal

Sev Usal is a famous Street food originated from Vadodara, Gujarat. It is one of my personal favorite recipes as well. The Boiled peas are cooked in a Tomato based curry with some spices. Refer the step-by-step recipe with YouTube video.

For usal
  • 2 tbsp Oil
  • 1 tbsp Butter
  • 1 tsp Cumin seeds
  • few Curry leaves
  • 2 medium Onion (fine chopped)
  • 1 cup Tomato puree
  • 1 tbsp Ginger-garlic paste
  • 2 Chopped Green chili
  • 1 cup Boiled, Mashed potato
  • 1/2 tsp Turmeric powder
  • 1 tbsp Coriander powder
  • 1 tbsp  Red chili powder
  • to taste Salt
  • 1 tbsp Garam masala
  • 1 bowl Boiled peas(Mutter)
  • 1 cup Sev
  • few Coriander leaves
  • 1 tbsp Lemon juice
For Garlic chutney
  • 2 Green chili  (fine chopped)
  • 10-12 Garlic cloves
  • 1 inch Ginger
  • 1 tbsp Water
  • 2 tbsp Oil
  • 1 tbsp  Red chili powder
For Serves
  • 1 bowl Sev usal
  • 1 tbsp Kasuri Methi crushed
  • 1 tsp Garlic chutney

  • 1 inch Ginger
  • 1 tbsp Water
  • 2 tbsp Oil
  • 1 tbsp  Red chili powder
For Serves

  • 1 tbsp Kasuri Methi crushed
  • 1 tsp Garlic chutney

  • Pav
Instructions
For Usal
  1. Heat oil and butter into a pan and add cumin seeds. When seeds turn light brown then add curry leaves. Saute curry leaves for a few seconds.
  2. Now, add onion into the pan and saute till it turns light brown.
  3. After that, add green chili and ginger-garlic paste into the pan. Mix it well and saute for a minute.
  4. Also, add tomato puree into the pan. Mix it well and cook for 5 to 10 minutes on medium flame.
  5. When oil released on top of the puree then add mashed potato, turmeric powder, red chili powder, coriander powder, salt, and garam masala into the pan. Mix it well.
  6. Now, add boiled peas, mix it and cook for 10 to 15 minutes on low flame.
  7. After 15 minutes, Transfer usal into a bowl and keep aside.
For Garlic chutney
  1. Grind green chili, garlic cloves, and ginger with little water into a mixer jar and make a smooth chutney.
  2. Transfer chutney into a bowl.
  3. Now, heat oil into tadka pan. Once oil heat then turn off the flame and add red chili powder. Mix it well.
  4. Pour this mixture into the chutney bowl. Mix well.
For serve
  1. Take usal into a bowl and add 1 tbsp or 1 tsp garlic chutney. Mix it well.
  2. Also, add some sev, coriander leaves, and kasuri methi.
  3. Serve sev-usal with pav, onion and lemon slice.
